I Scream, You Scream, We All Scream For Ice Cream!

As promised here is the recipe for Ben & Jerry's Vanilla Superfudge Brownie Ice Cream : ) For some reason it didn't turn out quite as well as the first batch of chocolate ice cream I made, it wasn't quite as smooth, but was still delicious! I added chunks of white chocolate to jazz it up a bit but feel free to mix it up and add whatever (chocolate chips, nuts etc.) you prefer.


Vanilla Superfudge Brownie Ice Cream

1 cup coarsely chopped Superfudge Brownies (see previous post)
2 large eggs
3/4 cup sugar
2 cups double or whipping cream
1 cup milk
2 tsp vanilla extract

1. About one hour before making the ice cream, place the brownies in a bowl, cover and freeze.

2. Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes. Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. Pour in the cream, milk and vanilla and whisk to blend.

3. Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions.

4. After the ice cream stiffens (about 2 minutes before it is done), add the brownies, then continue freezing until the ice cream is ready.
